Chicken "Muffins"- from Alicia Stacy
1 can biscuits (10 biscuits)
1 large can chicken or 1/2 to 1 cup cooked chicken breasts diced or shredded
1/2 can cream of chicken soup
frozen broccoli cuts (or other veggie of your choice)
pepper
shredded cheddar cheese
Preheat oven to temperature on biscuit can. Grease a muffin tin. Place one biscuit in each muffin cup. Mold the biscuit with your fingers into a "cup" shape.
In a small bowl, mix together the chicken, cream of chicken soup, broccoli cuts and pepper. Spoon some of this mixture into each biscuit "cup." Bake for 9-10 minutes, then top with shredded cheddar and bake until cheese is melted.
