Crust
1 pkg (24oz) frozen shredded hash brown potatoes, thawed
1 egg, beaten
Salt/pepper to taste
Topping
7 eggs
1/2c milk
Salt/pepper to taste
1c shopped ham
1/2c sliced mushrooms
1/4c green onion slices
1/4c chopped green bell pepper
1 1/2c shredded cheddar cheese
Preheat oven to 400.
Cover round baking stone with parchment paper. Combine crust ingredients and spread onto prepared stone; pat down with the back of a spoon. Bake 20min
For egg topping, whisk eggs and milk together. Season with salt/pepper. Microwave on high for 3min, stir. Microwave 3 more min, stir. Spread cooked egg mixture over potato crust, top with veggies and then the cheese.
Return to the oven for 10 min
Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. I typically create a monthly menu that includes links to the recipes on here. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.
