16 oz pkg baby carrots
3 lb boneless pork roast
1/2 c BBQ sauce
1/4 c honey
1/2 t salt
1/4 t pepper
Place carrots in bottom of crock pot, arrange pork roast on top. Combine remainign ingredients in a small bowl; pour over pork. Cover and cook on low for 8-10 hrs.
* recipe says you can shred the meat and serve on rolls
Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. I typically create a monthly menu that includes links to the recipes on here. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.

Very good! Not a strong BBQ taste, more of a sweet flavor. If you are going to shred for sandwiches- I would pull the meat out about an hour before serving and shred. Remove the carrots with a slotted spoon and cover for later. Return the shredded pork to the cp and stir into the juices for the hour left of cooking time. The carrots must have been good because my anti-veggie kid chowed on them!
