4 boneless, skinless chicken breasts, pounded 1/4 inch thick
1 C shredded mozzarella cheese
4 slices bacon, crisp cooked and crumbled
1 egg, slightly beaten
1/2 C Italian seasoned dry bread crumbs
2 T olive or vegetable oil
1 jar (26-28 oz) pasta sauce
1 C chicken broth
8oz linguine or spaghetti, cooked and drained.
~ Evenly top each chicken breast with cheese and bacon crumbs. Roll up, secure with toothpicks. Dip in egg, then bread crumbs.
~ Heat oil in a large skillet. Brown chicken over medium head, turning occasionally.
~ Stir in pasta sauce and broth. Bring to a boil over high heat.
~ Reduce heat to low and simmer covered 10 min or until chicken is cooked through.
~ Serve chicken and sauce over pasta.
Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. I typically create a monthly menu that includes links to the recipes on here. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.

This was good- very similar to a chicken parmesan. I made my rolled up chicken too thick though and they didn't cook through very well. Would try again with smaller roll-ups
