Paula Deen's Corn Salad (from Alli Ring)
Ingredients:
1 (30 oz) can of whole kernel corn, drained
1 (30 oz) can of whole kernel corn, drained
2 cups grated cheddar cheese
1 cup mayo
1/2 cup red onions, chopped
1 cup green peppers, chopped
1 (10 1/2 oz) bag coarsely crushed Fritos Chili Cheese corn chips
Directions:
1. Mix first 5 ingredients and chill.

2. Stir in chips just before serving.
Alli's variations--I subbed cherry tomatoes for the green peppers and used 4 ears of fresh sweet corn instead of the can of corn.
