Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. I typically create a monthly menu that includes links to the recipes on here. I have not figured out how to upload my menu to the blog but if you are interested, send me your e-mail and I will get it to you. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.

If you try a recipe, please leave a comment on how it was. Any advice or tips for that recipe would be great too.

Chicken Nuggets (with veggies)

* From Jessica Seinfeld's Deceptively Delicious
1 c bread crumbs
1/2 c flaxseed meal
1 T grated parmesan
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1 c broccoli, spinach, or sweet potato puree
1 large egg, lightly beaten
1 lb boneless, skinless chicken breast or tenders, rinsed, dried, and cut into chunks
1/2 tsp salt
1 T olive oil

In a bowl, combine the breadcrumbs, flax seed meal, Parmesan, paprika, garlic, onion powder.

In another bowl combine egg and vegetable puree- mix with a fork and set the bowl next to the crumb mixture.

Sprinkle the chicken chunks with salt. Dip the chunks into the egg mixture and then toss them in the breadcrumbs until completely coated.

Coat a large nonstick skillet with cooking spray and set over medium-high heat. When the skillet is hot, add the oil. Place the chicken nuggets int he skillet in a single layer, being careful not to crowd the pan, and cook until crisp and golden on one side, 3-4 min. Turn and cook until the chicken is cooked through, golden brown and crisp all over, 4-5 min longer.
