1 1/2 c elbow macaroni (uncooked)
1 T olive oil
1 T flour
1/2 c nonfat (skim) milk
1/2 c butternut squash or cauliflower puree
1 1/2 c shredded cheddar cheese
4oz reduced fat or nonfat cream cheese
1/2 tsp salt
1/8 tsp paprika
1/8 tsp pepper
Bring a large pot of salted water to a boil, add pasta, and cook according to the directions. Drain.
While the pasta is cooking, coat a large saucepan with cooking spray and heat over medium heat. Add the oil, then the flour and cook, stirring constantly, until the mixture resembles a thick paste but has not browned, 1-2 min.
Add the milk and cook, stirring every now and then, until the mixture begins to thicken, 3-4 min. Add the vegetable puree, cheddar cheese, cream cheese, and seasoning and stir until the cheese is melted and the sauce is smooth. Stir in the pasta and serve warm.
Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. I typically create a monthly menu that includes links to the recipes on here. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.
