Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. I typically create a monthly menu that includes links to the recipes on here. I have not figured out how to upload my menu to the blog but if you are interested, send me your e-mail and I will get it to you. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.

If you try a recipe, please leave a comment on how it was. Any advice or tips for that recipe would be great too.

Mozzarella Sticks

1 c whole wheat breadcrumbs
1 T flax seed meal
1 T sesame seeds (optional)
1 c shredded part-skim mozzarella
1/2 c cauliflower puree
1 T cornstarch
1 T olive oil
1/4 tsp salt

In a bowl, toss the breadcrumbs with the flaxseed meal and sesame seeds.

In another large bowl, stir together the mozzarella, cauliflower puree, and cornstarch until well combined. Shape into eight 2X1/2 inch logs. Gently roll each log in the breadcrumbs, the wrap in aluminum foil or waxed paper and freeze for 20 min.

Coat a large nonstick skillet with cooking spray and set over medium-high heat. Whent he pan is hot, add the oil. Arrange the mozzarella sticks in the pan in a single layer, being careful not to crowd them. Cook for 3-4 min, turning occasionally, until the crumb coating begins to brown. Sprinkle with salt and serve with ketchup.
