1 1/2 lbs new redskin potatoes
1/4 c water
1/4 c butter, melted
1 T lemon juice
3 T fresh parsley, minced
1 T fresh chives, snipped
salt/pepper to taste
If desired, pare a strip around the middle of each potato.
Place potatoes and water in crock pot. Cover and cook on high for 2 1/2- 3 hours, until tender; drain. In a small bowl combine butter, lemon juice, parsley, and chives. Pour over potatoes, toss to coat. Sprinkle with salt and pepper.

Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.
