8 medium potatoes
2 bunches green onions with tops, sliced
1/2 c grated parmesan cheese
2 tsp salt
2 tsp pepper
1/4 c butter, cut into pats
paprika to taste
~ Heat oven to 350. Prepare a 9x13 inch baking dish by spraying with non-stick cooking spray.
~ Place potatoes in a large stockpot with enough water to cover. Boil for 20 min; drain. Cool slightly then peel the potatoes. Shred with a knife or in a food processor.
~ Place potatoes shreds in a large mixing bowl. Add green onions. Stir in the parmesan cheese, salt, and pepper. Spoon into the baking dish. Dot with the pats of butter. Sprinkle with paprika.
~ Bake for 40 min or until the top begins to brown. Let stand for 10 min before serving.
Welcome to my recipe blog! I hope I can give you some inspiration to try some new recipes. I started this because I was feeling in a rut with my cooking. When I would find a new recipe online I was saving the page but then my bookmarks were overloaded. This is an easier way for me to keep them organized AND to share them with my friends and family. I typically create a monthly menu that includes links to the recipes on here. We are pretty plain eaters around here so nothing fancy but it's mostly kid friendly that way.
